Our Discovery Sessions have started. This very unique program is unlike any other in our industry. We teach our cooks to think and learn at another level. We urge them to seek out what it is they want to learn and we provide the tools for them to discover. When we started this the excitement in the kitchen was very evident. We have an incredible talent pool and what better way to grow our team then to share that knowledge and in a formal process, teach each other how to be better culinarians.

We have 8 classically trained chefs on our staff that are more than eager to share what they have learned over the years...


Learning

Between our Black hat Chef culinary training program and our 2.0 version of "Discovery Sessions", we have really begun to make an impact in the quality of our culinary team. Imagine going to work and being able to spend a portion of your work time learning new “things”.  We want them to learn something they have never done before… want to learn to make sourdough bread… do it! Want to learn how to  make a consommé properly..do it!  Want to learn how to make sausage… do it! Want to learn how to work with pulled sugar… do it!. We encourage a culture of learning and we love “food speak". 
The more involved a cook is in our program, the better our food will be. This is how we will change hospital food forever. It is not  about recipes.. it is about changing the culture in your kitchen. That is what we do best.


Knowledge

Walking through our kitchen today, I saw the following menu items being prepared. This is knowledge!
  • Turkey Pastrami... pictured above
  • Chicken Tandori
  • Homemade Kielbasa
  • House made pickles
  • Bahn Mi sandwiches
  • Veal bones brought
    in for next weeks... Pho menu.
  • Pork loins being hand stuffed
  • Vinaigrettes  being made fresh by our cooks
  • Fresh whole grain salad
    being prepared.
What struck me was how competent the staff is. They are well informed, well trained and are always looking for ways to improve. What more could we ask for. Discovery Session is part of this great culture of knowledge


Excellence

Each student is given a journal to keep of their discoveries. They have to talk about their inspirations and what lead them to discover that menu item. They keep detailed notes of ingredients and the cost of the meal. It is a true learning experience for everyone involved

We then meet a s a group monthly and discuss what we learned, what was good, what was not so good. We talk about how this can be applied to better our food program. We think of ways as group to implement this discovery into our menus.


Discovery sessions is very unique in the healthcare industry… allowing your cooks to take time out of their week to learn something new..Imagine that

Here is an example of our discovery sessions.. Chef Steve Making Kielbasa. It was so good. It was a big hit with our cooks who all wanted to learn how to do it. That is what discovery sesions is all about.
